This is a dessert that loves you back! Possibly the quickest, simplest and healthiest chocolate mousse there is.
 
Use raw cacao as the bean is still in the original state, uncooked and unprocessed which has a high nutrient quality and is more alkalising.
 
You will need two perfectly ripe avocados for this recipe. (To help ripen them simply put in a brown paper bag with a banana peel for a few days.)
 
HEALTH BENEFITS
Avocado is a great source of monounsaturated oleic acid that research has shown to both reduce dangerous low-density lipoprotein cholesterol at the same time as increasing the more beneficial high-density lipoprotein cholesterol .
 
They also contain a rich variety of heart nutrients including vitamin E for preventing cholesterol oxidation; folate for reducing dangerous homocysteine levels in the blood; potassium for regulating blood pressure; phytosterols for reducing cholesterol absorption; Vitamin C and a variety of carotenoids to boost your immune system and dietary fibre to control blood sugar.

INGREDIENTS

 

MOUSSE

2 avocados

4 tblsp raw cacao

4 tblsp coconut syrup
1 tsp raw vanilla essence

1/2 tsp Himalayan chrystal salt

1 handful of cocoa nibs

1 handful of berries

 

 

METHOD

 

In a food processor, add the avocados, cacao, coconut syrup, vanilla, and salt.

 

Process until smooth and creamy. Taste for sweetness and add more syrup if necessary.

 

Spoon the mousse into serving bowls. Refrigerate for at least 2 hours. The mousse will become thicker as it refrigerates.

 

Garnish with berries, pistachios and cocoa nibs.
