BAKED CARROT, APPLE & CHOCOLATE OATMEAL

I come from a breakfast family!
My sister and I were laughing the other day that we often get excited about a warm, nourishing morning feed before we go to sleep.
 
On days I know I'll be out and about with clients, or in meetings until late afternoon, I make sure to have a really substantial meal in the morning.
 
This means a meal with protein for blood sugar stabilisation, a complex carbohydrate for slow energy release and some fibre to keep you full.
 
Integrating a vegetable or fruit in  nearly anything I make has become second nature and you can hardly taste the carrot in this delicious baked carrot, apple and chocolate oatmeal.
 
As with all my recipes please feel free to experiment. I recently made a tasty version without the carrot and apple but adding two ripe bananas and it was absolutely delish!
 
If you aren't hungry in the morning but want to have healthy food for the road: This dish travels exceptionally well in a glass container (I use pyrex as I can bake it in there as well) and I have seriously eaten this in the parking lot of the airport...
 
 
 
 
 
 
 
 

INGREDIENTS

 

1/2 cup rolled oats

1 carrot, grated

1 apple, grated

3 tbsp raw cacao

3-4 dates, chopped

1 handful raw walnuts, chopped

2 flax egg (or organic eggs)

1 tsp cinnamon

1 tsp ground ginger

1 tsp vanilla essence

 

Please add extra sweetener (honey, syrup or stevia) if you have a sweet tooth.

 

 

 

 

METHOD

 

Preheat the oven to 160 C.

 

Combine all ingredients and pour into a greased baking dish.

 

Bake for 20 minutes or until top turns crispy.

 

Add fresh fruit, dairy or anything you feel suitable. Serve warm.
