Very quick and so easy to make, this roasted beetroot and lentil hummus is a great basic condiment for every day.
 
It’s like the white or black basic t-shirt in your closet. You can wear - pardon - eat it with anything, regardless if it’s cooked, grilled, steamed or raw.
 
Serve for any occasion or just have a little snack with a good slice of bread or to sparkle up a sandwich.
 
I have just discovered Pure Life sprouted breads. Serve on top with orange zest and it’s a completely satisfying meal.
 
Using baby beets makes the puree more delicate and tasty.

INGREDIENTS

 

HUMMUS

1 + 1/2 cup cooked lentils

2 medium beets

1 clove garlic, peeled

4 tbsp tahini paste

2 tbsp olive oil

Juice and zest of two lemons

1 tsp Himalayan Crystal salt

Basil leaves or other fresh herbs, for garnish

 

 

 

METHOD

 

Wash, peel and roast the beets on 180 C for 20 min.

 

Once cool, add with all remaining ingredients in a food processor until smooth and season to taste.
