INGREDIENTS
1 can of black beans,
rinsed and drained
2 eggs
(if vegan substitute with the chia egg: for each egg use 3 tbsp water with 1 tbsp white chia seed meal)
3/4 cup coconut nectar
1/2 cup raw cocoa powder
1 tsp baking soda
1 tsp freshly ground coffee
1 tsp coconut oil
1 tsp almond milk
1 tsp balsamic vinegar
1 tsp vanilla essence
1 cup raw caco nibs (or nuts)
METHOD
Preheat the oven to 200 C degrees.
Blend all ingredients until smooth and pour into a bowl. Fold in 1/2 cup of the cacao nibs or nuts until combined. Pour the brownie batter into the prepared pan. Sprinkle the remaining cacao nibs evenly over the top of the brownies.
Bake the brownies until a toothpick comes out clean, about 30 minutes. Allow the brownies to cool completely before slicing them into squares.
