Recipe for Black Bean Brownie

If you find yourself relegating a tin of beans into the back of your pantry or considering them ‘poor man’s meat’, please make these outrageously delicious brownies. You will never look at this versatile nutritional powerhouse the same way again.
Beans, part of the legume family, are an ancient food that has been cultivated all over the world for thousands of years.
A staple food of many cultures, including those of Asia, South America, Central America, and the Middle East, beans are a portable, tasty, and non-perishable food that can be easily adapted into any cusine.
Usually brownies are high in calories, fat and sugar but this recipe makes them gluten free, grain free, (almost) fat free and they come out with a dense, velvety texture. Like magic, there is no taste of beans to be found in them at all.
And it gets better: Beans are considered a protein-rich Superfood full of amino acids, phytochemicals (incapacitate cell-damaging free radicals in the body), antioxidants and lots of fiber. They are digested slowly and help to keep insulin levels stable. Add raw cacao powder which is highly alkalising and full of nutrients you are creating a super healthy snack.

Your preparation time is 2 minutes (throw everything in the blender) and bake for 20-30 minutes!



1 can of black beans,
rinsed and drained

2 eggs
(if vegan substitute with the chia egg: for each egg use 3 tbsp water with 1 tbsp white chia seed meal)

3/4 cup coconut nectar

1/2 cup raw cocoa powder

1 tsp baking soda

1 tsp freshly ground coffee

1 tsp coconut oil

1 tsp almond milk

1 tsp balsamic vinegar

1 tsp vanilla essence

1 cup raw caco nibs (or nuts)







Preheat the oven to 200 C degrees.


Blend all ingredients until smooth and pour into a bowl. Fold in 1/2 cup of the cacao nibs or nuts until combined. Pour the brownie batter into the prepared pan. Sprinkle the remaining cacao nibs evenly over the top of the brownies.


Bake the brownies until a toothpick comes out clean, about 30 minutes. Allow the brownies to cool completely before slicing them into squares.
