RECIPES
INGREDIENTS
BASE
2 cups carrots (shredded)
1 large apple
1 cup walnuts or pecans
2 cups dates (pitted)
1 cup coconut (shredded)
1/4 cup coconut oil
1/2 cup raisins
juice of one lemon
1 tsp grated ginger (fresh)
2 tbsp vanilla essence
1 tbsp cinnamon
1 tbsp cardamom (fresh)
ICING
2 cups cashews (soaked in
fresh lemon juice overnight)
3 dates
1/4 cup coconut syrup
METHOD
Mix all base ingredients in a high speed processor until roughly chopped. The consistency of the base should be quite coarse.
Press this mixture firmly into a cake form.
Drain lemon juice from cashews, rinse with clean water and blend icing ingredients in a high speed blender until smooth and creamy.
Store in fridge or freezer for at least two hours before serving.
Keep in an airtight container for
up to one week.
CARROT CAKE (RAW)

We love carrot cake in any variation and I have been experimenting for quite some time to make a version that's high in fiber but a low GI and is packed with healthy fats and fresh spices aiding digestion.
I made this cake for a very special event this weekend called 'Australia's Biggest Morning Tea' a two monthly fundraising program for the Cancer Council. My friend Daniela hosted one of these morning teas at her house and raised a whopping $2730 for cancer research.
The idea of this event is very simple:
Get your family and friends together for a fun morning while collecting vital money for cancer research. Ask your guests to help out with bringing some morning tea along on the day.
The Cancer Council website has everything set up for individual fundraising and helps out with a hosting package full of helpful tips for planning, decoration ideas, recipes and activities for the day:
I know, there are so many charities and fundraisers out there and it's often overwhelming which one to support.
Sadly we seem to all have loved ones we lost to cancer but thanks to research and modern medicine we also know survivors! Cancer Council works hard to minimise the threat of cancer through successful prevention, best treatment, support and world-class cancer research.
The statistics speak for themselvers: 350 Australians are diagnosed with cancer on a daily basis. So let's get together with beautiful food and a positive goal to help beat this disease.
