Recipe for Cauliflower Rice

This looks and feels like rice but isn’t!
Try a cauliflower rice for variety... you will not be disappointed. Surprisingly easy to make, highly nutritious and low in calories and fat. You can add almost any seed or vegetable to this to enhance flavor and change texture.
 
I love frying the rice in coconut oil, adding some Mexican taco seasoning, spices like paprika and coriander,   peas, corn and roasted cashews or pumpkin seeds.
 
Enjoy as a simple separate dish or combine with meat or fish for a more balanced meal.
 
 
Health Benefit
Cauliflower is one of the cruciferous vegetables which have fantastic health benefits: High in Vitamin C, K, B6, B2, Folate, Panthothenic Acid, Potassium and Manganese. It contains anti-oxidants has anti-inflammatory benefits and supports cardivascular health. The fiber content of cauliflower, over 9 grams in every 100 calories, makes this cruciferous vegetable a great choice for digestive support.

INGREDIENTS

 

RICE

1 head of cauliflower

1 handful of peas

1 handful of corn

1 handful of pumpkin seeds

spices (mexican or indian)

 

fresh herbs to complement

the dish

 

 

METHOD

 

Grate fresh cauliflower in a food processor until it is the size of rice. Alternatively, you can shred it with a hand-held grater, or even use a knife, if you have the dexterity to chop it up very finely.

 

Heat a large pan over medium heat with a teaspoon of coconut oil. Once the oil is warm pour the shredded cauliflower, turning a few times until cooked.

Add peas, corn and spices for another 2-4 min until golden brown. Top with pumpkin seeds and fresh herbs.
