I was very sceptical when my mom first served me Bircher-Muesli for breakfast during my Kindergarden years. Rohkost (raw food) wasn't a common thing in the early 80s but she insisted and I grew to love it.
 
Whilst the simplicity of overnight oats, combined with a grated apple and milk (of your choice) is unbeatable, this recipe with Chai flavours works wonderfully for variation and makes breakfast almost taste like a dessert.
 
You can keep the oat mixture in the fridge for a couple of days. I find it actually tastes better after it has soaked for a while.
 
Health Benefits
A diet rich in fresh fruits and vegetables has been shown to significantly reduce the risk of cancer and other age-related diseases. Fruits are a source of fibre.
 
Oat products have been shown to help lower high blood cholesterol concentration (hypercholesterolemia) and thereby reduce the risk of arteriosclerosis. They are also a source of fibre and essential trace elements, especially whole oats.

 

INGREDIENTS

 

BIRCHER MUESLI

1 cup  steel-cut oats

1 cup unsweetened almond milk or other milk of choice

2 tbsp chia seeds

1/4 tsp ground cardamom

1/4 tsp ground ginger

1/4 tsp ground cinnamon

1/8 tsp nutmeg

1/8 tsp black pepper

1 tsp vanilla extract

1 tbsp honey

 

 

METHOD

 

Add oats, milk, chia seeds, spices, vanilla and honey to glass jar and stir contents together. Secure lid and refrigerate overnight.

 

The following morning, place oat mixture into serving bowls and top with additional milk or yogourt.

 

If you prefer a warm porridge- style, simply melt 1 tsp of butter in saucepan over medium-low heat. Stir regularly, for 1 minute and serve warm.
