Another hot (41 C) and sunny day in Western Australia and after three months of glistening heat the only thing I want is something freezing cold!
(Gosh, I can't wait for autumn to bring cold, crisp air and those beautifully long, rainy days.)
Meanwhile, let's make the best of what we have in the present: These cocoberry popsicles are a perfect 'cool-down' snack for hot days and whilst they aren't anything like the creamy sugary stuff from your Italian ice cream shop, they do taste lovely and have a variety of benefits:
Dairy free, refined sugar free, contain plenty of healthy fats and are made with fresh herbs to aid digestion and give a unique flavour. No guilt found here and great for kids as well.
You might want to experiment a little with various fruits and the amount of herbs and sweetener you add.
Use the coconut milk, honey, dates and vanilla essence as the base for your recipe.
The rest is really up for your hearts delight. I made a great version with pieces of fresh mango, banana and basil but these berry ones are my fav.
INGREDIENTS
1 can fresh raw coconut milk
1/4 cup honey or maple syrup
3 dates (soaked)
1 tbsp vanilla essence
frozen fruit (mangoes, bananas, papaya, cherries, blueberries, raspberries, strawberries, blueberries, peaches, apricots)
I have found that citrus fruits and coconut milk don't go together very well...
finely chopped thyme
finely chopped rosemary
finely chopped basil
METHOD
Fill 1/3 of the molds with fruit.
Blend the coconut milk and sweetener until smooth and fill molds until 2/3 full then add another layer of berries or herbs.
Freeze overnight or until sold
and enjoy!
