Natural Sugar, Healthy Eating, Organic



100 gr dates

125 gr crystallized ginger

100 gr almonds

1 cup water

125 gr butter

1 egg

3/4 cup organic flower

3/4 cup wholemeal organic flower

2 tsp bi carb soda

1/2 tsp salt

1 tsp cinnamon

1 tsp cardamon

1/4 cup rum






Preheat oven to 160 C.


Roughly chop dates and ginger in a food processor. Add one cup of water and bring this mixture to a boil in a saucepan. Set aside and let cool.


Mix egg, butter, rum, cinnamon, cardamon and vanilla essence
to a creamy texture and stir into date/ginger paste. Add chopped almonds.


Combine both flowers with bi carb soda and sift into cake mixture.


Pour into a greased baking dish and bake for 20-30 min or until skewer comes out clean.

I am slowly bouncing back from the biggest adventure of my life so far: Giving birth to our beautiful baby girl Antonia. It's been a wonderful first few weeks filled with many moments of tender love for this beautiful little soul. The sleep deprivation and healing of a difficult birth was a tough cookie to eat though! I have rarely felt so bare and out of control, almost removed from my usual bouncy self. The only thought that kept me halfway sane was to surrender into the moment and keep going from one to the next with lots of deep heart breathing and taking in the reality of it all.
Nobody can even remotely prepare you for motherhood and I guess it means different things to different people. What surprised me most was the insane amount of love my heart is able to produce for this little person. Yes, it really does feel like your heart walks outside your body and nothing else matters except for her wellbeing.
My mom came from Germany (in true Mama-bear-style) to take care of me, so I can take care of Antonia. I never felt the same gratitude and love for her because I'm slowly starting to understand what a long and winding road motherhood is.
She made beautiful lunches, dinners and cakes - all in her usual simple deliciousness. This date & ginger cake was a half and half creation amongst us while we were feeding, nursing and rocking Antonia to sleep. It's scrumptious to eat and very easy to make (we managed with a newborn).
Whilst I love the simplicity of it – you can easily sparkle it up with a cream cheese frosting or a chocolate coating for a fancier version.
The cake is only sweetened with dates (great for fiber content and rich in several vitamins and minerals) and candied ginger which has a variety of health benefits: It possesses sinus-clearing abilities, warms the body and is considered a herbal remedy for symptoms of chronic fatigue syndrome and stress.
