INGREDIENTS
100 gr dates
125 gr crystallized ginger
100 gr almonds
1 cup water
125 gr butter
1 egg
3/4 cup organic flower
3/4 cup wholemeal organic flower
2 tsp bi carb soda
1/2 tsp salt
1 tsp cinnamon
1 tsp cardamon
1/4 cup rum
METHOD
Preheat oven to 160 C.
Roughly chop dates and ginger in a food processor. Add one cup of water and bring this mixture to a boil in a saucepan. Set aside and let cool.
Mix egg, butter, rum, cinnamon, cardamon and vanilla essence
to a creamy texture and stir into date/ginger paste. Add chopped almonds.
Combine both flowers with bi carb soda and sift into cake mixture.
Pour into a greased baking dish and bake for 20-30 min or until skewer comes out clean.
