FENNEL, APPLE & CUCUMBER SALAD

INGREDIENTS

 

1 fennel

1 apple

1 cucumber

1 tsp flower seasoning (optional)

1 tsp black seeds

olive oil and apple cider vinegar

1 tbsp pistachios

 

 

 

METHOD

 

Thinly slice the fennel, apple and cucumber on a mandolin and mix in a bowl. Drizzle with olive oil, apple cider vinegar and season with spices.

 

Lastly sprinkle the nuts on top and enjoy fresh.

It's 35 C today and I started packing all my favourite winter clothes for our three month trip to Europe. Feeling the fabric of wool and looking at all the dark wintery colours is almost a bit surreal, especially as I am sipping on cold water, air conditioner running - looking down on my barefoot feet. But I know I'll need them in a week - it's freezing cold in Germany.
 
So, this will officially be my last recipe from hot Australian summer - stay tuned for warm, nourishing ideas from February onwards.
 
This is a beautiful light and crisp salad perfect for hot summer days. The crunchy texture of the cucumber and fennel are great with the mild sweetness of apple. Add apple cider vinegar, spices and olive oil for a perfectly balanced side salad.
