When we were little, my sister and I would have one treat we could never ever get enough off: Reeses Pieces Peanut Butter Cups! When we moved back to Germany in 1997 my mom bought bundles of them at the Commissary in El Paso, Texas. But we ran out eventually and that was that!
 
A few years ago when the raw food scene hit Australia I discovered how to make my own chocolate. In fact, I don't think I ever tasted real chocolate until then. Making chocolate or chocolatey things is on my weekly agenda and over the years I have made many many amazing batches.
 
Peanut butter and chocolate get on like a house on fire and it's no art to pour the two together and have super healthy, raw peanut butter cups.
 
Make sure you get good ingredients - cacao is one of the highest sprayed plants in the world so I always invest in raw organic chocolate powder/butter. Coconut nectar has a low GI and much less fructose than agave so its my sweetener of choice.
 
And if you are a health nut like me - making your own peanut butter is just a matter of slowly roasting the peantus over low heat and grinding them in a food processor...
 
 

INGREDIENTS

 

CHOCOLATE

1 cup cacao (raw)

1 cup cacao butter

4 tbsp coconut nectar

 

PEANUT BUTTER

2 cups peanuts

Place in a food processor, and grind until desired consistency.

 

 

METHOD

 

Place the cacao butter in heat proof dish and melt, over low heat, in a water bath. Stir in raw cacao and coconut nectar. (Make sure this mixtures doesn't reach more than 40C as the raw cacao will loose all it's goodness above that.)

 

Meanwhile prepare the peanut butter. Either DIY or open a jar!

 

Then layer one chocolate one peanut butter and another chocolate in a silicone mould or cupcake wrapper.

 

Place in fridge for half an hour (or longer) and enjoy.
