VEGGIE RICE PAPER ROLLS (RAW)
Raw, Vegetarian, Vegan, Paleo, Gluten Free
Ideas and recipes from sunny Australia, for nourishing,
wholesome foods, prepared
with holistic ingredients that
love you back.
After ten days of Christmas festivities and the beginning of many hot Australian summer days I am looking for light and tasty meals that are easy to transport and low in calories.
We have plenty of outdoor activities coming in the next few weeks and rice paper rolls tick all the boxes. (The non-fried version, just to let you know :-)
They are incredibly versatile as you can create them with just about anything you want. Fill with plenty of fresh leafy greens, herbs, raw veggies or/and a protein of your choice.
One of my favourite versions is a vegan variation with cooked Quinoa and roasted nuts dipped into a balsamic miso dressing. Yum!
They are also great if you want to use up leftovers like seafood or chicken so you can make multiple rolls and suit everybodys dietary choices.
1 packet rice paper wrappers
1/4 of green leafy salad
1/2 carrot, grated
1/2 cup fresh herbs (coriander, parsley, basil, mint)
1/2 cup of beetroot, grated
1/2 avocado, sliced
protein of your choice: cooked quinoa, chicken or fish.
Dip each rice paper roll in a bowl of hot water for a few minutes to soften. Then spread each sheet flat on a clean workbench/plate.
Assemble with ingredients
as per illustration to your right.
