INGREDIENTS
1 packet rice paper wrappers
1/4 of green leafy salad
1/2 carrot, grated
1/2 cup fresh herbs (coriander, parsley, basil, mint)
1/2 cup of beetroot, grated
1/2 avocado, sliced
protein of your choice: cooked quinoa, chicken or fish.
METHOD
Dip each rice paper roll in a bowl of hot water for a few minutes to soften. Then spread each sheet flat on a clean workbench/plate.
Assemble with ingredients
as per illustration to your right.
