SWEET POTATO, SESAME & CHICKPEA PIZZA (VEGAN)

This pizza crust is wheat-free, gluten-free, yeast-free and grain-free. (A lot of free’s in there...) The base is a combo of vegetables, legumes and seeds which yields high density nutrition. Feel free to add whichever topping suits your taste best.
As you have probably noticed, I fall into the 'spontaneous cook' category. Experimenting with different colours, textures and flavours is a lot of fun, so I often just look what I have in my fridge and create toppings as I go.
Sesame seeds are loaded with essential minerals such as manganese, copper, iron, zinc, phosphorus and calcium.
Among all the nuts and seeds commonly eaten across the world, sesame seeds have been found to contain the highest amount of phytosterols, which are known to lower bad cholesterol.
Sesame seeds increase your levels of Vitamin E, which plays a vital role in fighting disease.
Sesame seed oil is known to reduce hypertension and ease stress. The antioxidants in sesame seeds fight free radicals, thereby promoting youthfulness and strengthening the immune system.
A substance in sesame seeds has been found to inhibit the spread of many cancers.
1 cup ground sesame seeds
1 cup grated sweet potato
1/2 cup of chickpea flour
1/4 cup of coconut oil
1 tsp of dried spices
sea salt to taste
5 cherry tomatoes
2 mushrooms finely sliced
1/2 beetroot finely sliced
1/2 zucchini finely sliced
some tomato paste or pesto
SPRINKLE ON TOP
1 handful of raisins
1 handful of cashews
1 handful of sesame seeds
1 handful of pepitas
Process all crust ingredients in a food processor or mixer. Lightly oil a baking tray and spread mixture about 1 cm thick. Bake for up to 40 min at 150 C.
Spread tomato paste or pesto onto crust and add toppings. You can either stir fry or steam toppings beforehand or sprinkle on top and put back into oven for another 5-10 min.
Season and sprinkle with nuts.
