We recently went on a weekend getaway to tropical Broome in Western Australia. I was totally blown away by what they make and sell at the local markets called 'fruit thingy': A mango and coconut sorbet-like ice cream but much better and healthier. I asked the smoothie maker for ingredients and he pointed at some frozen mangoes. Frozen fruit, that's it? No dairy, sugar, caramel, thickeners, emulsifiers? Just plain frozen fruit pressed through a cold press juicer?
 
Indeed, works beautifully and it's so much fun to experiment with various flavours and ingredients: My favourites are papaya-coconut, mango-passion fruit, kiwi-banana and strawberry-raspberry-blueberry (very berry)...
 
It's a wonderful way to use excess fruit by freezing and making delicious ice cream style desserts. Add banana and coconut for a creamier consistency.
 
 
 

 

METHOD

 

 

Freeze fruit without skins, stones or seeds and cut into pieces that fit into the feeding chute of your cold press juicer.

 

Remove the frozen fruit 10 min before you plan to use them.

 

Press through your cold press juicer (I use an oscar neo) or thermomix and serve immediately.

 

Place in colourful jars or cups and sprinkle with fresh fruits or superfoods... a guaranteed delight for any occasion.
